This recipe features tender, buttermilk-marinated chicken coated in a crunchy, flavorful spice mix, all cooked to perfection in the air fryer. Perfect for a quick weeknight dinner or a weekend treat, these chicken burgers are sure to be a hit with the whole family.
Ingredients
- 5 Irish boneless, skinless chicken thighs or breasts (beaten down to form a burger)
- 300ml of buttermilk
- 125g of cornflakes
- 125g of Panko breadcrumbs (optional)
- 2 tbsp of Chinese five spice
- 1 tsp of garlic powder or granules
- 1 tsp of cinnamon
- 2 tsp of salt
- 1 tsp of cracked black pepper
- 1 tsp of chilli powder or flakes
- 4 tbsp of plain white flour
- Neutral oil
- Brioche buns, coleslaw, mayo and pickles to serve
Steps
- Remove fat from chicken and spread out and/or beat with a rolling pin to form the burger shape. Put into a large bowl.
- Pour all of the buttermilk on top of the chicken, ensuring it is covered entirely. Wrap and cover and leave in the fridge for 4 hours, and up to 24 hours to allow the chicken to tenderise in the buttermilk, the longer the better.
- Crush cornflakes in a zip loc bag until there are no large pieces. Mix together in bowl with the panko breadcrumbs. Add all of the spices and flour and mix throughly.
- Once ready to cook, take out the chicken and using a pair of tongs, remove each piece of chicken one by one, allowing excess buttermilk to drain. Plain each one into the breadcrumb mixture, and cover entirely, pressing down firmly on both sides to ensure full coverage. Place each one on a plate.
- Place into the airfryer and drizzle over oil. Cook for around 25 minutes at 180C, ensuring it cooked the full way through. Serve in toasted brioche buns.
