Pork Steak with Sweet Red Pepper Sauce

This delicious dish features tender Irish pork steak seasoned with warming spices and served with a creamy and sweet roasted red pepper sauce. The pork is seared until golden and roasted to perfection, whilst the vibrant sauce - made with red peppers, fresh basil and Greek yoghurt - adds a lovely Mediterranean touch that pairs beautifully with the spiced meat.

Ingredients

  • 1 Irish pork steak, trimmed well
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoons of cumin
  • 1 teaspoons of paprika
  • 200g of roasted red peppers in jar, or fresh peppers roasted, peeled and sliced
  • 2 minced garlic cloves
  • 1 spring onion, finely chopped
  • 1 tablespoon pf lemon juice
  • 1/2 teaspoon of ground cumin
  • Small handful of fresh basil leaves
  • 2 tablespoons of fresh Greek yogurt

Steps

  1. Preheat your oven to Gas Mark 6, 200°C (400°F). Combine the oil, cumin and paprika in a small bowl. Brush the spice mixture all over the pork steak, covering throughly, then season with salt and freshly ground black pepper.
  2. Get a non-stick frying pan hot over a high heat. Add the pork and sear it well on all sides until browned. Pop it into a roasting tin and cook in the oven for 30 minutes.
  3. While the pork's cooking, prepare the sauce by putting all the ingredients into a food processor. Blitz for a couple of minutes until smooth. Heat in a saucepan for approx. 5 minutes on medium heat.
  4. Once the pork is done, take it out of the oven and let it rest for a few minutes.
  5. Slice it up into thick slices and serve alongside the sauce and some chunky pieces of potato, carrot and red onion tossed with olive oil, seasoned well, and roasted for 20-30 minutes.
