A hearty homemade meal combining rich, caramelised Irish beef chilli with fluffy rice and fresh guacamole, all wrapped in warm tortillas. This comforting dish balances smoky chipotle heat with cooling yoghurt and sharp lime. Perfect for a casual family dinner or make-ahead lunch, these flavourful wraps offer a taste of Mexico with minimal fuss and maximum satisfaction.

- 500g Irish round steak mince
- 400g brown rice
- 4-6 wholemeal tortilla wraps
- 1 large onion, diced
- 2 minced garlic cloves
- 2 tsp chipotle paste
- 2 tbsp Cajun or fajita seasoning
- 1 tbsp dark brown sugar
- 1 tbsp cider vinegar
- 400g drained black beans
- 400g can chopped tomatoes
- 1 large diced tomato
- 1 diced red onion
- Small bunch of coriander
- 1 juiced lime
- 2 avocados
- Sour cream
- Cheddar cheese to serve
Steps
- Heat the oil in a frying pan over a medium heat and crumble in the mince. Fry for 15-20 minutes until the liquid has evaporated and the mince begins to sizzle in its own fat.
- Once it starts to brown, break it up with a wooden spoon to ensure it caramelises all over. Add the onion and cook for another 10 minutes until softened. Stir in the garlic, chipotle paste, spice mix, sugar and vinegar, cooking for 1 minute to release the flavours.
- Tip the beans and tomatoes into the pan and give everything a good stir. Allow the mixture to simmer, uncovered, for 20 minutes until properly thickened.
- Whilst the chilli simmers, place the rice in a medium saucepan with 600ml cold water and a pinch of salt, if desired. Bring to the boil, then reduce the heat to low, cover and gently simmer for about 20 minutes until all the water has been absorbed. Turn off the heat and leave undisturbed for another 10 minutes. Finally, stir the rice and leave to stand.
- For the guacamole, combine the tomatoes with the onion, coriander, lime juice and seasoning, then mash to create a chunky texture.
- To serve, warm the tortillas and roughly spread some guacamole over each one. Add a generous layer of rice, followed by the chilli, sour cream, a squeeze of lime juice and grated cheddar. Wrap everything up tightly, cut through the middle and serve.
