Homemade Irish Smash Burgers Recipe

Ingredients

  • 2 tbsp of full-fat mayonnaise
  • 1 tbsp of ketchup
  • 2 tsp of English mustard
  • 1 tsp of Worcestershire sauce
  • 1/2 tsp of smoked paprika
  • 2 tbsp of finely chopped sliced gherkins
  • 2 tsp of pickle juice
  • Any oil for frying
  • 400g of Cribbin's Irish Round Steak Mince
  • 1 onion, finely sliced​
  • 8 slices of mature Irish cheddar cheese
  • 4 brioche buns
  • 4 sliced gherkins
  • 1 whole little gem lettuce, leaves separated
  • 2 large vine tomatoes
  • Salt and pepper

Steps

  1. Mix together the mayo, ketchup, mustard, Worcestershire sauce, paprika, sliced gherkins and pickle juice in a bowl and set aside in the fridge for later.
  2. Divide the mince into four even meatballs, then flatten between two pieces of square parchment paper to form a rough disc shape.
  3. Heat some oil in a frying pan on high heat, and add the burgers into the pan, pressing down firmly as they cook with a spatula, for about 1-2 minutes. Season the side facing up well with salt and pepper.
  4. Ensure you see a light crust forming on the edges of the burgers before flipping. Add the diced onions into the pan to cook and flip the burgers when ready. Cook for another 1-2 minutes. Once the burger is full cooked, season again and set aside.
  5. In the same pan, place the brioche buns cut side down and toast lightly.
  6. Spread the burger sauce generously over the cut side of the buns and top with the cheese, lettuce and gherkins. Place the smash burgers on top and serve.
