Ingredients
- 2 tbsp of full-fat mayonnaise
- 1 tbsp of ketchup
- 2 tsp of English mustard
- 1 tsp of Worcestershire sauce
- 1/2 tsp of smoked paprika
- 2 tbsp of finely chopped sliced gherkins
- 2 tsp of pickle juice
- Any oil for frying
- 400g of Cribbin's Irish Round Steak Mince
- 1 onion, finely sliced
- 8 slices of mature Irish cheddar cheese
- 4 brioche buns
- 4 sliced gherkins
- 1 whole little gem lettuce, leaves separated
- 2 large vine tomatoes
- Salt and pepper
Steps
- Mix together the mayo, ketchup, mustard, Worcestershire sauce, paprika, sliced gherkins and pickle juice in a bowl and set aside in the fridge for later.
- Divide the mince into four even meatballs, then flatten between two pieces of square parchment paper to form a rough disc shape.
- Heat some oil in a frying pan on high heat, and add the burgers into the pan, pressing down firmly as they cook with a spatula, for about 1-2 minutes. Season the side facing up well with salt and pepper.
- Ensure you see a light crust forming on the edges of the burgers before flipping. Add the diced onions into the pan to cook and flip the burgers when ready. Cook for another 1-2 minutes. Once the burger is full cooked, season again and set aside.
- In the same pan, place the brioche buns cut side down and toast lightly.
- Spread the burger sauce generously over the cut side of the buns and top with the cheese, lettuce and gherkins. Place the smash burgers on top and serve.
