These delicious Irish sausage rolls are a perfect treat for breakfast. Made with savoury Irish pork sausage, wrapped in a flaky puff pastry, they are so easy to make and sure to impress. Prepare them and store in the fridge, then enjoy them fresh out of the oven.
Ingredients
- 100g of Irish sausage meat (or sausages without casing)
- 100g of fresh Irish pork mince
- 100g of Irish black pudding
- 1 tablespoon of fennel seeds
- 1 tablespoon of sesame seeds
- 1 apple, peeled and diced
- Salt and pepper
- 1 sheet of puff pastry (pre-rolled)
- 2 whole egg yolks
Steps
- Preheat your oven to 200°C.
- In a bowl, mix the sausage meat, pork mince, and black pudding using a spatula.
- Toast the fennel seeds in a non-stick pan over medium heat, then blend into a powder.
- Add the fennel powder, salt, pepper, and diced apple to the meat mixture and fold together gently.
- Lightly dust a countertop with flour and place the puff pastry sheet on it. Cut the pastry lengthways into two equal rectangles.
- Roll the meat mixture into a long sausage shape and place it along the middle of each pastry rectangle, leaving about an inch gap at the top and bottom.
- Mix the egg yolks and brush the pastry edges lightly. Fold one side of the pastry over the sausage mixture and press down to seal.
- Cut away any excess pastry, then brush the tops with more egg wash. Sprinkle over the sesame seeds evenly.
- Place the sausage rolls on a baking tray lined with parchment paper.
- Bake for 20 minutes at 200°C until golden and cooked through. Allow to cool for a few minutes before slicing and serving.
